Rye and oats cookies with
Hi! I think we don't get enough sourdough recipes that are not plain ol' loaves, so I thought I'd share some of my creations, here's one I love, translated from my mom's recipe for oat cookies. Sorry it's in volumes but with cookies I sometimes just eye quantities tbh. xD They don't look like the most enticing treats in the world but that sourdough fermentation plus all the fibre really do make them filling and satisfying, one or two of them and you're full for a few hours.
2 cups whole rye flour 2 cups oats 1 cup whole wheat flour 2 cups baker's Splenda(we're very health conscious in my house but you can absolutely use any sort of sugar) 3-4 cups milk(can replace with vegans options) 2 cups discard starter(I don't use a method that produces discard so I just use normal starter around peak ferment) 1 cup raisins/cranberries/chocolate chips 1 cup chopped walnuts/peanuts 2 bars of 90g butteequivalent of coconut oil 1 teaspoon cinnamon 1 teaspoon cardamom
Basically just mix dry ingredients, toss in wet stuff, mix until it's right between pancake batter and bread dough in texture, let ferment overnight in the fridge, might want to add that extra cup of milk or more if it's dried up, since oats and raisins soak up a lot of water. Transfer to either cupcake moulds or your preferred method of baking cookies, bake at around 220°C for 50 minutes or until it's golden brown.

2024.06.02 18:46 please_respect_hats This thing is incredible

This thing is incredible
Bought a Creami Deluxe at Costco yesterday for $180. I’ve been wanting one for AGES, and recently got a better job, and moved near a Costco, and got a membership. The timing was right lol. The three pint containers included instead of the two was a great bonus.
I love frozen desserts, and while I love ice cream, honestly sorbet and frozen yogurt are equal with it.
I did the canned pineapple sorbet, canned mango, and strawberry frozen yogurt. I just bought a random container of strawberry Greek yogurt with a high-ish fat content and threw it in there.
All turned out amazing, with zero effort. I’ve tried other ice cream makers, and they either 1. Required too much prep, 2. Straight up didn’t work well, or 3. Didn’t make enough. They all ended up gathering dust.
With all of these, I was able to just process half, and have a perfect large bowl full. This is life changing lol
I also found that the containers fit perfectly on a shelf in my freezer, makes storing them super easy and unobtrusive. Keeps them flat took
It is loud, but I live alone, so that’s not an issue.
Time to buy more containers 🤣 I bought stuff for a few other recipes. Some peaches, ingredients for mint chocolate chip ice cream, and some fairlife chocolate milk. Excited for all the possibilities.
This subreddit has been great for tips, and read a lot before I bought it. I did have some icy edges with the pineapple, so I’ll run it under warm water next time. Still didn’t mind it though, added some texture.

2024.06.02 18:24 Boredom__ Am I losing weight too fast with PCOS diet?

I'm 22F and on May 20th I was 176lbs. My dr informed me about pcos and I was eager to implement a healthy new version of food I eat. I used to eat a lot of sugar without realizing and also didn't realize the huge energy drain it's had on me.
Since then, I've ate almost all whole foods. Oatmeal/yogurt + fruit for breakfast, eggs with vegetables, lots of fruit in general, I've ate out at restaurants and had tacos and chipolte bowls w chicken, beans, veggies. Salad w chicken, and im gonna cook tofu rice next. I eat nuts for snacks + 70% dark chocolate and I eat when my body physically indicates I'm hungry. I also drink low sugar coffee and just cut out or replaced stuff like granola or chips or sugary tea.
Before I was eating bc I felt my energy drop and I was addicted to sugar, and I thought I was crashing bc I was hungry. Now my energy is more consistent, more than before despite eating less, and my mood swings completely stopped. I'm committed to making this doable - I'm eating when I want to but just making healthier choices. The cravings are gone.
I've been eating like this since then and my weight was 163.3 first thing this morning before eating. It was 167 last night before bed. My original weight of 176 was in the end of the day. I felt good about 167 in the past 2 weeks ish, but 163 makes me nervous that I'm losing too fast. I'm gonna see a dr possibly about this, but is this a common experience when changing diet to be healthier?

2024.06.02 18:05 Firm-Philosopher9413 Is my mom sabotaging me?

I know, sounds like a super bold acquisition. But I'm 16 and have already lost major weight in these past few months. Started at 158.8. Weighed in at 125 this morning, the goal is 110. But my mom knows Ive cut out sweets and salts and etc. But then she buys a ton of junk foods. She bought some chocolate chip cookies this morning and set them right besides me. Is she trying to throw me of the tracks? She buys sugary stuff all the time but I never eat it. Im not going to have any of those cookies because happiness is more important, but is she really trying to make me gain weight?

I reduced the original recipe by 90% and tweaked it a bit to make four cookies. The result looks and tastes just like a full batch.

2024.06.02 14:58 Fizzabl If I replace plain flour with self raising, will it taste bad?

I just had a craving for cookies so I went to the shop (hour round trip on foot) and got some butter and chocolate chips only to come home and realise I don't have enough plain flour
They're just dead simple "make a ball and let it go pffft in the oven" cookies, four ingredients. So I don't really care if the self raising would make they a little funky shaped, just want to know if it alters the taste???
