2024.06.01 11:15 vbloke Cola experiments - the results

A week ago, I made 3 different cola recipes and left them for a week to mature (or in the case of the alcohol wash version, to separate). Today is the taste test day!
The alcohol wash version was filtered to remove the oils, then 100ml of the solution has had caffeine and citric acid added (50ml water with 65ml citric acid and 18ml caffeine powder) and 195ml caramel colour.
Each batch had 30ml (alcohol was 20ml) drawn off and added to 100ml of simple syrup. Then 25ml of the syrup added to a glass with 300ml sparkling water.

Taste tests!

Gum arabic:
This is the one I've been making for a while and it's decent, if a little citrus heavy. It's definitely a cola, better than a pound shop cola, but not as good as the two big hitters.
Polysorbate:
Foamed up incredibly and tasted a bit 'soapy'. I think I got the percentages or mix wrong on this one. Fail.
Alcohol wash:
Subtly citrussy, nicely acidic with a bitter edge from the caffeine and caramel. Definitely my favourite out of the three, but I think it may need more cinnamon and nutmeg to balance out the citrus flavours and add a bit more body.

Conclusion

The alcohol wash version wins but next time, I'll fiddle with the secondary flavours a bit more. it definitely needs a bit more 'body'.
If my calculations are correct, the final drink when diluted is around ~0.2% alcohol, so well below what is classed as non-alcoholic.

Amazing visit to etz in Nuremberg, the visit starts with a tour of their test kitchen. They ferment, dry, have their own garden only but whole animals, do their own charcuterie. A pretty small team, beautiful restaurant with and open kitchen and a big metal object in the middle where they are plating everything.
I was a bit overwhelmed by the components of every dish so my write up is pretty basic, since they make everything by themselves (vinegars, spices).

2024.06.01 09:22 -Wertoiuy- Help with Modern Industrialization automation? What am I missing?

I'm getting into the Electric Age (about to build electric quarry) and I'm trying to automate crafting because I don't want to craft motors and pistons and circuits by hand anymore.
I'm using Tom's Simple Storage (Inventory Hoppers and Level Emitters) to automate my cutting and pressing. I've got a working system where if I grab some bolts the level emitters turn off and the hoppers start pumping in rods, which turns off those emitters, etc. This system has made crafting things like bronze drills light-years easier.
I'm now trying to setup a system that will smelt my dust from the quarry and always have 1000 of each ingot in the system. I've setup a few configurable chests with 4 hopper inputs each, and set these inputs to the most common dusts. These chests then pump into an electric furnace. This works as well.
However, I setup a mixer to input copper and tin dust when bronze ingots are low, and then output the bronze dust back into the system (where it is sent back out to the furnace). The issue is that I ran out of copper dust, but since there wasn't 1000 bronze the system kept pumping in tin. I added more mats and copper dust, but didn't realize the system was backed up.
I feel like there's something the in-game manual isn't telling me or something I'm not understanding. It feels like without a way to set the assembler recipes or filter how machines input that this is bound to keep happening. I can't lock a slot in a machine to a certain item, so any automation requiring multiple inputs can get stuck if it inputs too much of one thing and not enough of the other.
I see people talk about how good the mod's item pipes are but they feel very limiting, and the automation tools seem clunky despite that being the really important. What am I missing?

Sharing this recipe for Cabbage Rolls that are really good and simple to make with less than $20 bucks thats gonna feed 3-8 people.
Lg Cabbage 1lb of ground beef Lg Onion Tomato sauce or Marinara Rice (white rice cooked)
The cabbage has to be boiled cut the end of it and boil it for about 10-15 minutes until softened. Then start peeling the leafs out to roll with Cooked ground beef that has the onion and added spices to your taste ( I use Pepper, oregano, salt and paprika) add a layer of marinara sauce to the pan place your rolls on pan cover them with rest of marinara sauce until simmered then serve with white rice. Hope this helps for a good recipe.

I’m starting C25K for a 2nd time after a lot of time out due to injury. At when I started last time I was working with a PT who had me doing bodyweight strength training in between my run days. It worked well and I progressed quite quickly. I have learned for my self, I need a program, like a recipe, to follow. Otherwise I lose direction or focus and it’s hard to stick with it.
Does anyone use an app or simple program for strength training for their non run day?

Date [standardized human time]: December 11th, 2136
“So if you ever want to try king crab, I’ll ask the kitchen staff to make some Arxur-friendly recipes,” Ezra said behind me as I polished off a few death curves. I sighed as I mentally scrapped my Laxna human cell line experiments. Well, at least the information is so mundane that Tayu is allowed to know.
“I look forward to it,” Tayu said. “Although, it is a shame that the gravid ones are released into the wild.”
“All in the name of sustainability,” I added. “No sense in eating your food to extinction.” I glanced at the time and shut off my computer. 6:45. “Long story short, intis is toxic. Not unexpected for a benzene derivative.”
You would figure an alien gut microbe that’s accustomed to surviving on non-intis containing alien food would fare better without intis, but maybe the adaptability comes from the rest of the Arxur microbiota. At least, I have proof of incompatibility between Laxna and earthly life to send, which was honestly all I expected.
“Shame,” Ezra said. “I hear there’s untapped potential in Wrissan plant life. Something about a taboo on seasonings.”
“Why would we taint perfectly good food with leaves?” Tayu asked. “Or those foul smelling bulbs you humans are so infatuated with?”
“Flavor Tayu, flavor,” Ezra responded.
“Flavor is right,” I agreed, my dour mood lifting somewhat from the banter. “Now let’s head to class, Tayu. Ezra, I wish to see you join us someday soon.”
After a short stroll down the hall, Tayu and I reached our classroom. The sound of scraping rocks resonated from Tayu as I opened the door. The usual attendees were present: Kassa, Graxif, and Athre; however, they were all circled around a notable guest for the lecture. I walked over to the crowd, with far less mirth than Tayu, and stood before my long lost pupil. Scales that were once a near-black grey, have taken on a certain glossiness and a purple hue. Golden eyes filled with a near serene meditative gaze looked down to me.
“Kasyi, welcome back,” I said, patting him on the shoulder. “It has been too long. How are you holding up?”
“Kassa did most of the holding,” Athre jeered, prompting laughter from the rest of the Arxur.
“A few soldiers too,” Kassa teased. “Poor ntahhe can’t handle a little clawing.”
“I was addressing Kasyi,” I responded. That was too much information. At least they’re opening up and being more sociable now. Also, soldiers? Plural?
“I am well, Abraham,” Kasyi said. “I took time to… meditate. To think we almost lost such a profound concept.”
I sighed a breath of relief and smiled. Yes, a new topic. “An ancient emperor wrote a book called Meditations if you are interested in reading more. I hear the book is quite enlightening.”
“Meditations by Marcus Aurelius,” Kassa said, earning many head tilts from the crowd. “We have access to most of human literature, so we should make use of it, no?”
“Kassa, you want to convert to an alien faith as well?” Graxif asked.
“We will take the best of these foreign ideas for our own,” Kasyi said.
“You two were serious,” Tayu said in disbelief. “How can you abandon the Prophet?”
“The Prophet has led us astray. Our minds have been enfeebled. Our tongues lashed. Our bodies starved. We need a new path.”
Kassa’s tail, ever so subtly shifted towards Kasyi, while the rest of the Arxur stared dumbfounded.
“Perhaps, we can begin with the main topic now,” Graxif said, pulling himself out of a stupor. “The elemental tables of our two species have been recently reconciled. Let us put that to use.”
“Well on that note,” I said before any theological tangents could sprout up, “I’ve noted that the basics of cellular metabolism seem to echo between Earth and Wriss. Cytosolic carbon metabolism is basal, with further energy extraction occurring in specialized cellular structure in ‘higher’ organisms. I quite appreciate how few steps your cytosolic metabolism seems to have, but the chemistry is… frightening.”
“The use of nitrites and nitrates are quite different from on Earth, no?” Kasyi probed. “They mimic the liberal use of phosphates that you would be more accustomed to.”
“But far less stable,” I replied. “What were the conditions on early Wriss like?”
“It is theorized that Wriss was moved closer to our star after life first began,” Kassa said. “Colder temperatures would favor less stable molecules, but there is no clear answer for why we use nitrates and nitrites so extensively.”
“Abiogenesis occurring further out in a solar system would require reactions with a lower energy input requirement. Of course, other environmental factors notwithstanding,” I mused. “That being said, your basic carbon is a carbon ring, which is generally stable. How would that work?”
“Wriss is riddled with metal,” Tayu said. “Nickel, platinum, and iron are all very common.”
“As is gold,” Athre added.
“Oh, and silver too?” I asked,.
“Immensely so,” Graxif answered.
“Well that helps explain a few things,” I said, rubbing my hand over my face. What star hypernova’d all over Wriss? THIS is what would destroy human-Arxur relations, not the sapiophagy. What do you mean platinum and gold are common?
“In comparison, Terran glycolysis seems quite profound,” Kasyi said, eyes glimmering. “With so few natural catalysts, how did such a system arise?”
“Early Earth,” I began, “was hot, iron-rich, and a generally reducing environment. Experiments in the 1900s, two hundred years ago or so, replicated these conditions and found many foundational amino acids, sugars, and other biotic precursors spontaneously arise from methane, ammonia, and other simple compounds.” Kasyi sat down as his eyes flickered about, scanning his memories for any relevant information.
“There is a theory that early Wriss was highly volcanic,” Kasyi said. “Perhaps this was the early condition that allowed Wrissan abiogenesis.”
“A cold planet, riddled with volcanoes would reconcile the two theories mentioned,” Athre said.
“Yes, it could,” I said, walking over to the board behind us. “Does anyone have any particular questions on glycolysis?” I began writing down a rudimentary series of chemical reactions as I awaited their response.
“Retrained use of metal catalysts aside, Terran glycolysis is fairly standard,” Tayu said. “The Venlil also work with five carbon sugars, and the Gojid use six carbon ones.”
“The Krakotl and Tilfish also use carbon sugars,” Graxif added.
“Good, good,” I said. “Because I need your hydrophobic, hydrocarbon-loving metabolism drawn out for me.”
“The translator should’ve been sufficient, no?” Athre asked. In the background, I heard Tayu pre-emptively turn off her translator.
“Methylmalondialdehyde translated, but what in the ‘I should’ve dropped organic chemistry’ is 2-methyl-5-nitroethyl-hexane-1,6-diol?”
I saw all the uninitiated Arxur scan the room, with increasingly pained expressions. Clearly whatever system the Arxur used to describe organic chemistry was less agglutinative and precise than IUPAC guidelines.
“Force stop,” Athre said.
“Reboot,” Graxif commanded.
“Off,” Kassa ordered.
“Restart,” Kasyi demanded.
“On,” Tayu said, with a smug look coming over her.
With restrained amusement, I watched the Arxur re-calibrate their translators after an auditory backhanding. Athre marched up to the board, sketched out all of the intermediaries for intis “glycolysis” using the ball-and-stick method, and drew arrows connecting them all.
“These are the structures of the molecules,” he said. “Name them something better.”
“Unfortunately, the structure becomes the official, standard name,” I said.
“That explains much,” Graxif said, rubbing his snout in irritation. “Single carbon bound to three hydrogen group bound onto the second carbon of the greater ring of carbon… Krakotl-shit, I can’t repeat it all.”
“The first time I heard Abraham name a molecule,” Tayu said, “the description started at the subatomic level to describe the quantum entanglements and subatomic wavelengths involved.”
“No wonder you all restarted your translators,” I said.
My eyes glanced over the, now-familiar, intis structure as it is first… hydrolyzed. The hydrophobic carbon ring is hydrolyzed. What kind of enzymatic black magic is this? Then we get the next, translation-confounding reaction where a nitrite molecule attacks an OH group, giving the molecule a fully-fledged nitrate group. The molecule is then split in two using hydrogen peroxide before another nitrite group reacts with the free OH group. Upon the next step, the nitrates have been removed, presumably for some substrate-level catabolism. The final carbon-source is methylmalondialdehyde, thankfully, a sensible molecule.
“The initial nitrite group is from free-floating ions?” I asked, pointing to the first reaction.
“No,” Athre said. “It comes from fluorohydroxyimidazoline trinitrate. The second comes from a helper molecule, yielding a net gain in energy.”
“Without somehow spontaneously detonating like the explosive it is,” I said exasperatedly.
I stared at the methylmalondialdehyde molecule, with a nagging feeling at the back of my head. I drew another, then another, then another. The class began muttering behind me as I shuffled bonds around. I moved the methyl group into the backbone and banged my head against the board. Fucking succinate.

2024.06.01 02:12 Queen_Bread TD23 Reboot (Season 1 Only) Character Rankings

I'll be doing a separate post just for Season 2 of the reboot later. Anyways,

Average (C Tier)

16. Caleb (The Best First Boot) - Just a reminder that this list only takes S1 into account (in case you got used to Caleb dead last already) so of course I don't HATE this Caleb. There's nothing to hate here. While the character itself didn't really do anything, I like the role he plays in the narrative, being by far the best first boot in this show. Long gone are the days of the first elimination being some idiot nobody likes getting everybody to hate them for the sake of it! She says, planning on writing about Season 2 later

15. Axel (Totally Not An Expy) - While I'm usually not a fan of comparing characters and going "this character is basically just X mixed with Y!!", I have a hard time believing Axel wasn't made with being Neo-Eva in mind. She was angry and left second and that's it... And that did make me really curious as to what they'd do with Axel in the rematch. But that's for later.
Remember when everyone thought Axel was gonna be awesome because of this shot?
14. Nichelle (I HATE YOU JERRY!!!) - This might come off as a surprise, but I don't actually dislike Nichelle. She had an interesting concept (famous teen actress going to TD for exposure) with a neat execution (got "exposed" as a fraud on TV, disappointing her fans and leaving determined to improve herself). It was clear she wasn't meant to be "complete" in Season 1, and was just being set up for a bigger story in S2, and there's nothing really wrong with that! We'll see how that went later.
Nichelle hates 1/2 of the Tennis Rivals, for some reason.

Good (B Tier)

13. Priya (Abusive Parents) - Surprised to see the winner of the season this low? Don't get me wrong, this IS the 'Good' tier, so I do like Priya, she's just not really my type of character. I think all comparisons to Zoey and Sky are incredibly silly and a bit dumb, the only thing they have in common is being athletic, and Priya actually has a personality. Yes, it was clear from the start that she was created with being the winner in mind, but that's not necessarily a bad thing, with Priya having an unique concept (raised by TD fans) and fun interactions and dynamics with the other characters, making her obvious win be satisfying nonetheless (take NOTES, Sky). And even after everything, there is still a good setup for things she could do in the rematch, such as addressing her home life and the way she was raised. Boy, I sure hope that happens!
Just wanted to say Priya looks really cute with messy hair.
12./11. Wayne & Raj (Thing 1 & Thing 2) - After Katie & Sadie and Amy & Sammy, I didn't expect to see a 'duo character' I'd actually like. I always knew they wouldn't be the gay couple like most people expected, as it would've been a boring approach, but I did suspect ONE of them would be part of it. And I was right, Raj having a self-discovery moment during the show was very sweet, and so was Wayne being a supportive ally to his bestie, it's a really great message to send to the kids who watch the show (and part of why I don't really like gay Wayne headcanons, it takes away the impact of him being 100% supportive of his best friend despite not being queer himself). Small complaints though, I think it would've been nice if we got to know Raj's thoughts on his coming out instead of just Wayne's, and the 'package deal' characters being eliminated together isn't really my cup of tea either. I don't mind it that much though, because surely Season 2 will separate them and have them be apart from each other for a few episodes, right? ...R-Right?
First and last time we see the Hockey Bros acting mean.

Great (A Tier)

10. MK (Parody Of Annoying Celebrity, Somehow Good) - If you know me, or at least have seen my profile picture, then this placement is probably a surprise. S1 MK is probably one of the most unique concepts this show has had.A thief who takes her castmates' belongings? Fun. Hacking the confessional camera to watch everyone's confessionals? Interesting. Intentionally floating to fly under the radar? Very interesting. Annoying snarker? Yes please. Overall? Great combo. She's only really "low" on this list because she left before being able to put, well, any of her plans in practice. Fortunately, there's still season 2, where we'll see a lot more of her unique strategy and villainy, for sure!!!!
MK: \"I can't wait to be seen as nothing but shipping fodder by the fans next season!\"
9. Damien (Best Design, Hands Down) - And the winner of most unique character concept goes to... Yeah, him. Some guy who's never seen Total Drama and doesn't know what he signed up for? You're crazy if you don't think that's one of the most fun ideas for a new character you've seen. He used a concept other characters failed at (being the token normal/straight man) and made it work! Damien (in season 1) is probably the closest this show has ever had to just having a real person: Being flabbergasted at the insanity that happens in cartoon-land that other characters don't react to, without being played as the "haha token coward afraid of everything", which is something not usually done (...We'll get to season 2 later.). His early exit was sad, but made sense, this wasn't meant to be his season. We all know he was being given an easy, impossible to mess up, set-up for a bigger role in the rematch! There is no way to do this wrong!
Damien: \"Oh well, at least I'll totally have a good arc next season, right?\"
8. Julia (wth is a buttknuckle) - "omg what!! why is queen slay girlboss Julia not in top3 you know shes perfect slay gaslight gatekeep girlb-" Shut up. God. Very annoying fanbase aside, S1 Julia was a fun twist antagonist. The 'good vibes, vegan crystal girlie' instagram influencer being a sour, evil douchebag behind the scenes? Great bit, we all know most of them are like this in real life. Her villainy is criticized by some people for being "too Heather-like", which I disagree with. Sure, her constant immunity wins may seem like heavy plot armor, but unlike Island Heather, others weren't constantly dumbed down to make it work, most of her wins weren't due to dumb luck, (like Heather in Search and Do Not Destroy) and most importantly, Julia was full of flaws. She was a challenge beast, yes, but the constant immunities were the only things she had, for the show goes on its way to show her game otherwise is horrible. Her social game is atrocious, due to being unnecessarily rude to everyone, she had no alliances (and when she did they didn't last a day) and most of her attempts to scheme backfired. Remember when she tried to make Emma vote for Chase and that somehow resulted in them getting back together? Like, wow, making Emma want to vote for Chase is NOT a hard task, girlie, come on. Julia's flaws keep her character grounded and make her stand out from other villains. God, can you imagine if she was like Heather, and everyone got dumbed down to make her look more competent and cause stupid eliminations? That would suck! Not like that'd ever happen though, haha.

7. Emma (Cringe Girl /affectionate) - God, she's so cringe (/pos). When I saw her face in Chase's intro, I knew there was going to be juicy drama and I'd live for it, but I was not expecting THAT trainwreck. I don't even know how to proceed with this paragraph properly without just calling her cute or stupid (affectionate) and calling it a day. I can't imagine the writers didn't have fun writing her and her extreme emotions; There's a lot of characters the fandom labeled as being "neurodivergent-coded", and while I see the vision with most of them, I think people overlook Emma as one (or maybe I'm just projecting onto her, whatever).While I don't like Chemma as a ship, I can't deny that they have a great dynamic, though it's funnier when it's Emma hating Chase while he tries to win her back, so Chemma getting back together at the end was a bit of a letdown. I do hope season 2 gives us more Chase and Emma individually without both of them being attached to each other though (clueless).

6. Millie (WOAH! GOOD WRITING!? IN MY TOTAL DRAMA!?) - Now, I know what some of you are probably thinking; "Millie is a horrible character she floated!!" "She foated and had to be carried by Priya!!" "She's a horrible friend she wrote mean things about Priya!!" Shut up shut up shut up. Millie haters, you guys are weak and aren't surviving the winter. Anyways, Millie makes me extremely happy, she has what I consider to be one of the best cases of character development in TD: First arriving with the intent of writing a thesis about how Gen Z is really stupid, befriending someone for the first time, growing to regret ever writing bad things about the others, and then being confronted about it and having to work to patch up her friendship with Priya? Total Drama hasn't had an arc this good in ages, and people think Millie is a bad character? I'm sorry, do you miss Skave or something? I totally understand not liking Millie due to finding her boring or uninteresting,those are valid reasons, but if you dislike Millie because you think she's a "bad person" who "didn't deserve being forgiven" (the amount of people I've seen say this is concerning), then I'm sorry, but I think you're stupid.

5. Scary "Lauren" Girl (I don't care if she's one-note stfu) - Scary Girl is a character I've noticed to be pretty divisive. The people who love her do so because they think she's pretty funny, and the people who hate her think she's a one-note gimmick. I'm the former, obviously, I see a lot of people complain that they find Scary Girl to be "overrated", (1. Not a valid reason to dislike a character 2. She literally isn't. Stop throwing that word around, it's already losing it's meaning) and while I do understand why people wouldn't like her, because yeah she does only have 1 joke, I think that one joke is really funny and consistently lands. Also I'd just like to point out that a lot of comic relief characters aren't very varied in terms of humor either but I don't think the fandom is ready to accept that yet. The hockey bros also only have 1 joke and it's less funny than Lauren's Oops, who said that? Wasn't me! Must've been the wind!
She's literally just a girl why are people afraid of her /j
4. Ripper (do you think Ripper has a fursona? no? just me? okay then) - Ripper in S tier?! I know, scandalous! "But you're not supposed to like Ripper he's a mean bully who farts and is gross he's like Owen!!" Shut up, NERD. Anyway, I'm not really fond of toilet humor, but Ripper made up for it by having a lot of hilarious jokes outside of farting (something people will insist is his entire character) and he has some depth that could use some more exploring, such has his home life and his relationship with his parents. Pretty much every dynamic he had with other characters, even if short, were bangers, proving that his character is super versatile. Chase, Zee, Priya, Millie, Axel, Damien... He just works with anyone. Him, Bowie and Millie are the three characters I believe you can pair up with literally anyone, and you can squeeze a good dynamic out of it.
Ripper knows we love him, because he's based.
3. Zee (I don't have a joke for this one bear with me) - I don't have much to say about him like everyone else, because Zee is a simple character. He's really funny, and that's it, and it just works. Dude's hysterical and that's why I love him. Yeah
Birds don't like Zee because birds are stupid.
2. Chase (Horrible Person, Hilarious Character) - Another probably controversial take, and I just know a certain someone on this sub will be very happy with this placement. Chase is, in my eyes, the best comic relief in this show, part of it is because of how unique and specific the joke with him is. We have a million "comically stupid" characters at this point, and we (or I) still love them regardless, but having a comedic character with a different brand of humor makes them stand out more. Chase is so unapologetically a jerk, and that's what makes him so funny to me. He's not a complete idiot like Tyler, Max, Raj, Wayne, Zee and Ripper are, in fact, in s1 he shows a lot of intelligence and common sense for a comic relief character, it's just that he's such a self-centered douchebag that he doesn't see anything wrong with his actions while everyone else recognizes him as a horrible individual, and that makes him so unique in the sea of "idiot men" characters that is TD. Episode 10 was one of the best episodes in the whole series, and the biggest contributors to that? Come on, you know it's him and Emma. They are everything, they are the moment.
\"Chase how many people did you run over that day?\" Chase:
1. Bowie (Drama King and Queen) - When I first saw his design in the promo, I admit I was very afraid? Not because I didn't think a stereotypically gay character could work, but because this is Total Drama. I was afraid they'd mess up and accidentally make the most offensive shit ever like the last few times they tackled minorities (cough cough Mike). When I first watched the season? All worries left my body in an instant. My God? STRATEGY?! IN TOTAL DRAMA? That isn't just an evil villain manipulating everyone using plot armor??? It was a BLESSING to see, even if I was a little upset he got villanized by the end of the season, it does show that TD will always portray ambition to win as inherently evil and something that needs to be punished (and it certainly doesn't make me very excited for future seasons' villains). For what it's worth, I enjoyed watching an actual strategist character onscreen that was neither fully evil or a moron the writers wanted to believe you to be smart, that makes Bowie the first ever. Also the queer rep? Really awesome. I loved his relationship with Raj, and how healthy it was compared to other TD relationships, and I love how it shows a "villain"/strategy focused player can be a good person/partner. It felt so surreal (in a good way) watching a TD character that wears gender non-conforming clothes and has a very flamboyant and sassy personality. Bowie also has some of the best quotes in the season ("MEEE!" and "Oh my, did I do that? Yes I diiiiid! I'm going to be a MILLIONAAAAAAAIRE!" are some of the best ones)

Final Thoughts: Overall, excellent cast! the only characters below B tier are the first three boots. A great and colorful cast in a good season filled with great writing, and there's even a second season after it? This is a recipe for success, surely the second season will be as great as the first one, if not better, right? Right?

Hi all,
I am a little embarrassed to post this given how simple this is supposed to be, but I cannot seem to find any success making crème fraîche at home.
I make my own yogurt and have tried using the leftover whey as well as actual yogurt for the starter. I’ve tried tall containers as well as wide. Ratio is about 1 cup heavy cream to 1-2 tbsp starter, though after my first couple failures I’ve gone as high as a quarter cup starter.
I’ve tried sealing the container as well as leaving it open to the air. On the counter as well as in the oven. Ambient temp is always between 70-76 F.
Every single attempt has left me with just…heavy cream that’s maybe slightly sour. Any thickening, if at all, is limited to a top layer of what essentially tastes like light butter.
I’ve compared recipes from several sources including serious eats.
I can only conclude that either my starters, for whatever reason, aren’t sufficiently active to propagate in the cream or maybe I need to up the ambient temp to like 80F or higher?
But seriously, this should be stupid easy and I’m no slouch in the kitchen. Thoughts?

I read a post imploring that customers be nicer. I get it. Customers have the capacity to be really nasty, and I've had my fair share of days soured by disrespectful customers. But, there's two major problems with the incessant anti-customer rhetoric.
  1. Every day, the subreddit seems to become more about "Customers are bad for this reason". It started with complaints about specific experiences, then has started to become full-blown rants about the customer base overall, constantly. This really detracts from every other aspect of this sub. Recipes, interesting experiences, a place for baristas and customers to really meet a middle ground for discussion and such, support, etc. It can leave customers feeling isolated from all of this. Even if they aren't the archetype you're ranting about, it still fosters this "ugh, customers" environment that nobody wants.
  2. Aside from the customer empathy, more importantly, complaining constantly in a place like this can be corrosive for your mental health while working. I, of course, complain about shitty customer interactions with my coworkers from time to time, and we joke about it with each other. But I used to constantly complain and we'd feed off each other's contempt for the customers. This made me hate my job and the prospect of getting up to do it. It was miserable. And that's only accentuated when you can do it anonymously and the environment in the sub will just bounce off it so easily. Nowadays, when a customer annoys me, I make a joke about it or something to a coworker and just forget it happened. I know it isn't always that simple, but it's a whole lot better than putting yourself in a position where it can just fester because you have everyone echoing the same sentiments around you in post and upvote form.
Anyways, I'm not saying don't complain or vent at all, but don't be surprised or discredit customers who express discomfort with basically being marginalized.
This is basically a Re: to a post complaining about complex customer orders. Yes, it was mostly pointing out rude customers, but there was definitely a crowd simply complaining about customers who order complex drinks.

We just bought our first house! So now is the time we have to be extra budget conscious. But now is also the time when people will want to come visit. It has always been just my husband and I, and we never have guests. So I honestly have no clue what a cheap, healthy and easy dish would be that would be appropriate. (Note: my husband is a bit of a food snob, so he’d never go for something simple and easy like serving spaghetti). Please send me your favourite recipes that fit the bill! Hi there! 24F, 5'5, 255 lbs. I was born without a thyroid and have been on Levothyroxine all my life (currently on 125 mg) and have had some ups and downs in my journey. My weight has always fluctuated as a young child from extremely overweight to 'normal' weight range. It got really bad around the time I was ending college/ending a 5-year relationship that led to me going off my meds for almost a year due to depression and mental health. I've been back on my meds consistently for almost a year now and even started to gym/hike and feel such a boost in my mental health, but what keeps weighing me down (like literally lol) is the difficulty losing weight. I'll admit I haven't balanced my diet accordingly with my exercise due to a long and early work commute during the week which definitely makes it hard to put the energy into a healthy balanced meal when the days over so I wanted to ask if anyone has any simple healthy meal recommendations? Unfortunately I've always been a picky eater when it comes to fish and veggies, but I'm definitely more motivated than ever now to try anything to lose the weight and feel more confident ! I think what makes it difficult for me to maintain a healthy diet is worrying about eating the same things over and over because I enjoy variety, and also not really having any recipes in mind. Any and all suggestions are welcome :)
