first loaf, undercooked or under proofed?
hi everyone!! so this is my first time ever making sourdough and using my own sourdough starter and i had a few questions. so i did a fun recipe that's chocolate and espresso, but after i did the cold proof in the fridge for over 15 hours i felt like my dough was looking odd. but, i decided to go for it anyways and my bread turned out like this. i let it cool for about an hour and it was a little warm when i cut it open. did i underproof? underbake? this is my first time using my homemade starter so i'm thinking maybe that wasn't ready yet? i'm open to any advice!

2024.05.29 01:23 BarberDouble2565 Lemon Cream Pasta With Lobster Tail

Lemon Cream Pasta With Lobster Tail
Homemade Recipe
Pasta
  1. Boil spaghetti noodles in salted water until al dente
  2. Strain water but save some of it for lemon cream sauce
Lemon Cream Sauce
  1. Skin a lemon with a knife and make fine julienne slices
  2. Finely dice 1 large shallot
  3. Finely dice one clove of garlic
  4. Get a pan hot (around medium) and toss in olive oil, butter, and shallots. Let that cook down a bit.
  5. Toss in garlic and cook for like a minute
  6. Add about 1-1.5 cups of heavy cream and immediately add your fine julienne slices
  7. Squeeze in half a lemon, or more if you want, and add a pinch of salt and pepper
  8. Reduce for a few minutes until sauce thickens
Pasta + Cream Sauce
  1. Add cooked pasta to lemon cream sauce and toss in some of that saved pasta water.
  2. Mix around and your pasta is done
  3. Add some fresh grated parmesan
Lobster:
  1. Season lobster however you like. I used a Puerto Rican blend that I use with fish and chicken often
  2. Vacuum seal lobster in a bag with butter and thyme
  3. Souse vide for 1 hour at 124 degrees F
  4. Take out lobster tail and place on top of lemon cream pasta.
First time making this so if anyone has tips please leave them in the comments:)

My first attempt at Viennese Whirls. Piping bag burst, I miscalculated the amount of halves (silly brain moment)
I was to make 10, after the bag burst I was a little flustered and made 10 halves... 5 giant not so whirly Viennese biscuits... But the taste... Amazing

2024.05.29 00:43 Gottalovelilac Homeade perfume recipe

I really dont know if this is parfum or perfume but im just going to say its perfume
When I made this perfume I wasn't paying very much attention to the amount exact measurements of the stuff I was adding, so this recipe wont be very detailed, or the measurements might be off. please forgive me.
Note I did all of this in a 2 inch height 1 inch wide bottle.
Homemade perfume, Vanilla scent with a touch of lavender.
Ingredients:
Vanilla extract
Lavender essential oil
Carrier oil (I used apricot kernel oil, so preferably that)
Recipe:
  1. Take your bottle and fill it up with about 70 percent carrier oil (or about 5 tablespoons)
  2. Add about 30 drops of lavender essential oil
  3. Add in about 4 teaspoons of vanilla extract
  4. Shake well until most is combined
  5. Enjoy!
Measurements can be altered based on your scent preferences
2 things to note:
  1. This is strong perfume/parfum. You really only need 2-4 spritz
  2. The carrier oil you use will make your perfume/parfum spell much different. Mine mainly smells like vanilla, but you can also smell the apricot oil. If you used a different kind of carrier oil and it smells weird, that might be why.

2024.05.29 00:40 KennyGdrinkspee Egg yolks for ice cream

I want to make homemade ice cream. The recipe calls for egg yolks. Is there a way to prepare the yolks to ensure they're safe to eat? Is it possible to buy pasteurized egg yolks, because I haven't been able to find any. Thanks in advance for any help/suggestions.
Edit: I'm in the US, if that makes a difference wrt food laws and whatnot.

2024.05.28 23:43 Laminated_Paper Homemade salsa

Yo! I've been a big salsa guy ever since I was little and I was under the impression that homemade salsa either wouldn't be economical or worth the effort, boy was I wrong.
Where I live (Toronto, Canada) salsa has gotten pretty expensive, and my grocers don't offer the style that I like (smooth, sour restaurant style) so today I made it for myself.
Recipe below: (all prices in CAD)
Restaurant Salsa 1.1L/37.2fl oz $4.14 CAD
Whole No Name Tomatoes 1 can (796ml/28oz) $1.80
Small onion 125g/4.5oz $0.22
Cilantro Half bunch (20g/0.7oz) $0.75
Lime juice 2 tbsp $0.20
Cumin/Paprika/Chili flakes 1 tsp of each $0.27
Salt 2 tsp $0.02
Old El Paso Chopped green chilies 1/3 can (40ml/1.3oz) $0.83
Garlic 2 cloves $0.05
Took about 7 minutes to chop/blend, is exactly the texture/flavour I like and costs far less (2.4x cheaper than my grocery store). Green chilies are definitely optional, but I had them laying around and I feel like they were worth it even for my cheap a%$. Also bought everything full price, sales would make this far cheaper.

Hiya! Suggested recipe
First post on here. Really like what you're doing, feels like we're the X-Men, next generation of understanding we've been mutated by what's gone on before us. ANYWAY
It's always homemade bread and pizzas on here. That's great, but I'm a chef. Gonna hit you with a few easy recipes. Cheap. Quick.
This is "Mexicanish rice". Chop onions and carrots. Fry 5 mins. Add chopped peppers, smoked paprika, chopped garlic, salt, pepper, fry 3 mins. Add raw rinsed basmati or paella rice, fry 4 mins. Add chipotle, tinned pinto beans, tinned tomatoes (YES, I KNOW ABOUT THE CITRIC ACID), and boiled water. 3 cups for every cup of rice. Boil, then cover for 15 with the heat off. Stir occasionally.
That's it. Top with fresh cilantro. Sorted.

2024.05.28 20:42 Pink-pajama Just got told Sunscreen is harmful, toxic, leads to infertility autism and a laundry list of other issues. Wtf?

It was a "homemade DIY" SPF recipe 🤔 with these things listed as a reason why you should make it. I asked for sources and she gave a bunch of studies that dont even look that related to the topic to me though admittedly im not a scientist so maybe I just dont know how to read them. Have these things been debunked? I find it hard to believe that this could be true, SPF ingredients are regulated.

2024.05.28 18:50 soap_cone Tips for Wasp/Hornet Control?

Hello everyone,
I'm looking for some tips on wasp/hornet control, mainly on keeping them away from the house.
I know, I know, a near impossible task. I'm a 38-year resident, and have been living with these things since birth. I know they're a just an awful fact of Houston/Texas/US/World. Existence, really.
Anyway, anyone have any creative and/or effective ways on keeping them away from your residence?
And I have tried a lot on the past: those weird glass jars they "can't escape" (they can), gimmicks from big box stores and Amazon, homemade/diy recipes. Nothing but the Black Flag sprays seem to work. That and the Executioner Electrified Tennis Racket bug zapper (loads if fun!).
Any thoughts?

2024.05.28 18:29 Ordinary_Inside897 How to soften baking chocolate?

I have been trying to make homemade peanut butter cups. The issue I keep on running into is that the chocolate ends up being too hard and isn't enjoyable to bite into no matter how thin I layer it. I use milk chocolate compound and double boil it and pour it back like most recipes say to.
What can I do to make it softer like store-bought peanut butter cups?

2024.05.28 17:51 youthinthebooth How to prevent cheese sauce from curdling?

Homemade mac and cheese is probably my favorite dish of all time. Strangely enough though I feel like I’ve gotten worse at making it over the years!!! I don’t know if I’m just overthinking it or what. I make a roux (one part butter one part flour) , then I add my milk then I add my cheese. Lately, about 50% of the time, the cheese curdles though? Am I missing something?? Should I add the milk, remove from heat, then stir in cheese? Or all over low heat? Do i never stop stirring or do i always stir? I look at recipes on youtube and google but it never specifies those things): Any help is appreciated!!!!

2024.05.28 17:08 jbp84 Keto Citrus Cooler

For those of us of an ahem certain age, Citrus Cooler was the best Gatorade flavor back in the 80s and 90s. None other than the GOAT Michael Jordan said it was his favorite flavor, and as the song goes…”I want to be like Mike”…
So I made my own pretty close Keto version. I made the homemade LMNT recipe, added 1 packet each of True Lemon, True Lime, and True Orange, and monkfruit syrup to taste. I mix mine in 32 oz of water, as I find the saltiness overpowering otherwise.
It’s not an earth shattering discovery or anything but I wanted to pass that along. Now if I could just find some glass bottles with foam labels…

2024.05.28 16:54 starsbythesea Restaurant style avgolemono

Hi, all, I’ve made a few homemade avgolemono recipes, and although they’ve always tasted great, the one thing that I can’t seem to replicate is the immense silky creaminess of a restaurant style avgolemono. The only thing I can think of is that Greek restaurants use a larger number of egg yolks than recipes that I have replicated (which typically call for 2-3 eggs for a medium sized pot of soup).
Does anyone know the secret to making avgolemono that is thick/creamy?

2024.05.28 16:40 Allen261973 Experience with Estrogen based shea butter

1000g of 0.2% shea butter-based gel (1mg estrogen per 0.5g dose) - 2g raw estradiol powder 44g orange oil (d-limonene is a good penetration enhancer) 44g olive oil (contains a lot of oleic acid) 100g propylene glycol (solvent and penetration enhancer) 800g of shea butter or a possible premade cream (solvent and base) 500g of 0.2% estradiol gel (1mg estrogen per 0.5g dose of shea butter. The little problem is to calculate the dosage. I guess a pump bottle or dilution or experimenting to see what was best for each of us should be enough)
I tested the estrogen-based butter on myself choosing to jump the gun and for one day to not use my homemade gel. I haven’t been able to do blood tests yet but there had been periods before where simply because of laziness or other things, I didn't use my gel and in return my body made me pay for it with tiredness, headaches and sometimes hot flashes. It wasn’t the case this time. I felt more than fine. It's just had been a day but it already seems promising. My next blood tests will be in three months but even without them, I feel like my hormones are probably at the levels I wish they were if not more. I honestly think that using Shea butter itself with a hormone and maybe a little bit if any penetration enhancer would be enough due to the fact that Shea butter is mostly made of acids naturally acting as penetration enhancers.
I'm sure a lot of people will still doubt but even science shows that it is possible. We first have to acknowledge the fact that Shea butter is a fat (also a natural emollient ) mostly made of Oleic acid and Stearic acid, two skin penetration enhancers (https://en.m.wikipedia.org/wiki/Shea_butter). The typical levels of the major fatty acids present in shea butter are – oleic acid (C18:1) 34 to 62%, stearic acid (C18:0) 20 to 55.7%, palmitic acid (C16:0) 1.9 to 10% and linoleic acid (C18:2) 1 to 11% (https://kumarmetal.com/shea-butter-properties-applications/#:~:text=The%20typical%20levels%20of%20the,2)%201%20to%2011%25.).
-Oleic acid is widely studied and has been shown to disrupt the stratum corneum lipids, enhancing skin permeability. - Linoleic acid has been reported to increase skin permeability by altering lipid organization in the stratum corneum. - Stearic and palmitic acids have also been noted for their ability to modify the lipid bilayers of the skin, thereby enhancing drug penetration Effectiveness of Oleic Acid**:(Badran, M. M., Kuntsche, J., & Fahr, A. (2009). Skin penetration enhancement by a microneedle device (Dermaroller®) in vitro: dependency on needle size and applied formulation. European Journal of Pharmaceutics and Biopharmaceutics, 72(3), 511-523.
There is also substantial evidence that lipid-based formulations, including those with fats and oils, can be effective for transdermal drug delivery when properly formulated. These formulations often include a combination of oils, emulsifiers, and penetration enhancers. - Example: Various commercial transdermal products use lipid-based carriers with added penetration enhancers to ensure effective delivery. - Reference: Hadgraft, J. (2004). Skin, the final frontier. International Journal of Pharmaceutics, 285(1-2), 3-12. This review discusses the potential of various formulation strategies for transdermal drug delivery, including lipid-based systems.
Secondly, Steroid hormones (SHs) like Estradiol, Estriol, Estrone, even testosterone are lipophilic molecules (https://pubmed.ncbi.nlm.nih.gov/10874567/#:~:text=Steroid%20hormones%20(SHs)%20are%20lipophilic,oestrogens%20and%20progestagens%20or%20progestins). ) which means that they can dissolve in fats and oils, which includes shea butter.
There are probably a lot of other proofs that could be used but in clear, it is possible to use shea butter as a way to deliver drugs transdermally. Last if not least, I chose shea butter originally because more than having a lot of it around that I wasn’t using, Shea is one of the only if not the only butter that is both hydrating (https://www.laroche-posay.fl-acide-ferulique-un-anti-oxydant-puissant-pour-la-peau---la-roche-posay/quels-sont-les-bienfaits-du-beurre-de-karite.html#:~:text=Des%20propri%C3%A9t%C3%A9s%20nourrissantes%20et%20assouplissantes&text=Le%20beurre%20de%20karit%C3%A9%20est%20un%20excellent%20hydratant%20et%20%C3%A9mollient,pr%C3%A9venir%20et%20att%C3%A9nuer%20les%20vergetures. https://www.byrdie.com/shea-butter-skin-care-benefits-and-beauty-recipes-2442773 ) and moisturizing. I think it would only be beneficial to use a shea butter-based cream than an alcohol-based one when alcohol based cream particularly when used on the private parts under for better absorption can sting.
Depending on the dose and the formulation, an estrogen-based Shea butter could be used for skin care ( already made a post about it yesterday) or for delivery of transdermal drugs. I'm going to continue to apply it in the long term to have more data. I hope others here could join me or try to do other similar things. It could be fun and interesting
PS: here is a study showing the effectiveness of different oils as penetration enhancers( https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6264261/)
PSS: I based this recipe on the one of deathmetaltransbian. She's the true MVP here. Not sure if she's gonna see it but thank you for what you did. I would have never have thought about doing what I'm actually doing without the seeds planted by you and so many other cool people
PSSS: the best shea butter is the one that is raw, unrefined because most of the time, refined Shea butter lacks the things and the vitamins that make it great and is often modified by the people seeking it in some ways
